Lemon Orzo Shrimp

Are you ready for a delicious super easy recipe? (My favorite kind) Lemon Orzo Shrimp is a ridiculously easy weeknight dinner that everyone will love. My husband couldn’t went back for seconds and thirds!

After making this the first time, I thought it would also be really good with chicken too! Feel free to substitute shrimp for chicken.

You’ll need:

1 pound medium shrimp (peeled and deveined)

Salt, pepper, and garlic powder to taste

3 cloves garlic

Dried oregano to taste

1 box orzo pasta

2 cans chicken broth

1 lemon (juiced)

2 cups Parmesan cheese

1 bag frozen peas

1 can diced tomatoes

1 cup mozerella cheese

Here’s what you do:

Season your shrimp with salt, pepper, and garlic powder and set aside.

Preheat oven to 400 degrees

In a large skillet, heat up 1 tbsp of olive oil and add garlic and oregano

Stir frequently, cooking for about 2 minutes over medium heat until garlic is browned. Add orzo pasta, cooking another 1-2 minutes until pasta is also browned


Add chicken broth and 1/2 cup water and bring to a boil. Reduce heat to low, cover and simmer for 10 minutes. Add tomatoes and peas (eyeball how many peas you would like. I used about 1/4 of the bag), lemon juice and shrimp. Sprinkle Parmesan cheese on top and bake for for 13 minutes, until shrimp is cooked.


If you have an oven safe pan, you can put it right in the oven! If not, make sure you transfer your pasta to an oven safe dish before baking.

After the pasta is finish baking, serve and sprinkle with mozerella cheese, stiring until the cheese is melted into the pasta.


There you have it! It only takes about 45 minutes to make and it serves 4-6. Enjoy!
